I've been inspired by the Velveeta thread to post Josh's MAN FOOD dip.

-1/2 block velveeta (or use the non-evil replacement from the other thread)
-1 large sweet onion, diced
-3 cans Ro-tel tomatoes (we like 2 hot and 1 mild)
-1 lb ground beef or turkey

Cook your beef/turkey in a large, deep pan. After it is browned, remove it to some other bowl. Cook your onion in the beef drippings until nearly translucent. Add the (drained) cans of Ro-tel. Add the velveeta, cube by cube, stirring until everything is even.
Yield: a lot

He eats his with tortilla chips, I use toasted low carb tortillas.
We have been known to eat this for dinner :hide

Maybe some real cheese instead of that other junk. I think that old government cheese was pretty good!!!!

But then again, maybe I need to put my own manliness in check :lol: ;)

MP, I have groused at great length about the use of Velveeta. I even bought him a blob of nice Mexican melting queso. It didn't work at all, it got all watery and globbity :(
