Ideas for using up the sourdough starter tht you are supposed to dump.

I try not to dump my sd starter when I need to feed it. Sometimes I just increase the amount of flour to it if I am not going to use it that day. Today, I made 4 pizza crusts.

Recipe:

Sourdough Pizza dough

1 1/2 cups sd starter
1 1/2 cups flour
1 tbsp olive oil
1 tsp salt
a bit of water as needed.

mix together on speed two, approx 5-7 minutes after it clears the bowl. I do a windowpane test to make sure it is ready. It should be a soft dough.
let rest for 1/2 hour covered. then roll out to make a 12" pizza crust.
Prebake it at 450F for 5 minutes. top or freeze until needed.

Once topped, with your choice of toppings, bake at 450F for 15 minutes.



The next ones use a homemade bisuit mix: recipe first

Homemade Biscuit Mix

10 cups flour, white or whole wheat
1/3 cup baking powder
1/4 cup sugar
2 cups lard

Mix with pastry blender until it resembles littles peas

Lasts 6 weeks at room temp or 6 months in freezer

Sourdough Biscuits

2 cups biscuit mix
1 1/2 cups SD starter

Mix and knead 10 times
Roll out to 1/2 inch thickness and either cut with knife or round cutter

Bake at 400F for 15 minutes

SD Scones

same as above, except add 2 tbsp sugar, add nut and/or raisins,

Bake at 400F for 15 minutes

SD cinnamon rolls

Same as the scones recipe, but roll our thin.

Mix together 1/2 cup butter, 1/2 cup brown sugar, one tbsp cinnamon and spred on the rolled out pastry. Add nut and/or raisins

Roll up the pastry, and using a string, cut the roll into 1 /2 " logs
Bake 400F for 15 minutes



*****Sourdough pie Crust

Sift together:
1 2/3 cup flour
1/2 tsp salt
1/4 tsp baking soda

cut un 2/3 cup lard until it resembles coarse crumbs
add water very slowly--like 1 tsp at a time.
Cover an let rest 20 minutes

Roll out to make a crust to fit a 9 inch pie plate.
Use and bake as for any pie crust.



Those are my regulars.

Who else has some ideas?
Stir in 1/2 cup starterjust until all ingredients are moistened, adding water if too dry. (

Yes, but there are people new to sourdough, and it can get kind of overwhelming until you have done it for a bit. I figured a separate thread would make it easier to find. Sorry if you feel differently.
