I am wondering if any of you helpfull folks might be able to tell me what up with my jam...

the last batch of cranberrie curd jam...seperated a bit on the bottom...thought oh well tastes fine...
then yesterday I canned some apricot amereto jam...
and same thing...this batch may have boiled for a bit too long...

I am planing eventully to be including in christmas baskets...so would be wonderful if I could conquire this imperfection...

Some jams, usually strawberry for me, will end up with the fruit chunks floating near the top of the jar and most of the jelly at the bottom.

The usual method to deal with it is to invert the jars once they have sealed--even to give them a bit of a shake--before they are totally set. Sometimes there's nothing you can do until you open the jar, then you can just stir it all together more evenly :)
