)Plus hubby needed some to take to a meeting tonight. So we made oatmeal cookies and whole wheat chocolate chip with pecans

The oatmeal were so-so, but the whole wheat choc chip comes from the best cookie recipe I've ever made. It uses coconut oil which gives it an amazing chewy-ness and the whole wheat gives it a great texture - not at all what you might expect.

Recipe: Whole Wheat Chocolate Chip Cookies
3/4 cup granulated sugar
3/4 cup packed brown sugar
1/2 cup butter, softened
1/2 cup unrefined coconut oil, melted
1 teaspoon vanilla
1 egg
2 cups whole wheat flour
1 teaspoon baking soda
1/4 teaspoon salt -
* Java's note - I use 3/4 t. of sea salt* as I like a slightly salty/sweet flavor
1 cup chocolate chips
optional: add chopped pecans or walnuts
1. Heat oven to 375F. In large bowl, beat sugars, butter, oil, vanilla and egg with electric mixer on low speed until blended. Beat in flour, baking soda and salt until well blended. Stir in chocolate chips.
2. On ungreased cookie sheets, drop dough by rounded measuring tablespoonfuls about 2 inches apart.
3. Bake 7 to 9 minutes or until very light golden brown (centers will be soft). Cool 1 minute; remove from cookie sheet to cooling rack.
