That is why I went through all the trouble of weighing off and grating and freezing pounds and pounds of zucchini in Summer! It is delicious, warm or cold, and so easy to make. Plus it uses up a few eggs.

DH and the Wildbunch loves any eggy so this would fit the bill. I imagine it could be made in the crockpot. A good summer time vegetable glut recipe.
