Yes, now that we are almost to the finish line I can say it was simple, but we seem to always make things harder for ourselves.LOL

What a great situation with your neighbor - swapping pork for beef. I just love to bartar and swap.

As for the packed freezers................DH just made an appointment for the cows in March. Time to get cooking.
