Kalamata Olives (and a bit of a ramble...)

I just used them in a huge raw root veggie salad. I shredded red cabbage, green cabbage, radishes, turnips, carrots, beets and sweet potatoes, then drizzled with Italian dressing and chopped in kalamata olives. Yum!
 
What about an olive meat loaf (like the kind you buy in the deli meat section)??
I know lots of people make their own homemade bologna(actually theres a recipe around here or BYC for it),... why not an olive loaf?? :cool:
 
Good idea! Thanks redhen! Maybe after the bread I'll give that a whirl! :D

ETA: The jar of olives is huge so I'll be trying a lot of things!!

Usually its made with the green olives, but i bet Kalamatas would work too,.. maybe?

It's funny, this was actually in my bread maker when I clicked on the thread... (the recipe is for a 1.5 pound loaf, but I have 3 pound too if you need it) I LOVE kalamata olives, but a can of black olives is $1.98 here, and Kalamata olives are $7.50/pound in the bulk section so we just use black olives.

Olive Rosemary Loaf

1 C Water
3/4 C olives, pitted and chopped (I use black olives)
1 tsp salt
1 tbsp sugar (I use honey)
2 tbsp olive oil
3 1/4 C flour (recipe says all purpose, but I use half whole wheat and half all-purpose)
1/4 C snipped fresh rosemary (you can sub in 1 tbsp of dried rosemary)
1 1/4 teaspoon bread machine yeast

Use the french cycle :)
 
Thanks hwillm1977! This sounds yummy! I don't have a bread machine, but I think I can adapt it to hand mix...
