Korean recipes

I just had authentic Korean food for the first time today with a friend. I fell in love! I had many different fermented dishes, including 4 different kinds of kimchi and a special fermented sweet drink. (I can't remember the name now.)

I'm on a new quest to learn to cook/ferment Korean foods. Here are a few recipes for anyone else interested. (Feel free to add your own.)

My SIL is Korean, and a wonderful cook. Its kind of funny - she is always lamenting that she can't cook "American", and wants me to give her lessons when, someday, we live closer. And I want to learn how to do what she does! Because her husband, my brother, is American all her friends think she is the expert on American cooking, and keep asking advice for things like the Thanksgiving turkey; she just says she hasn't learned, because her MIL, for many years, and now her SIL (me) does it. The first time we had dinner at their house she had 2 different kimchis on the table - one for them, and one for us (not so hot); we liked them both, but kept going back to the spicy one . It was nice of her to consider that we might not be "into" hot stuff, but now she knows better

I used to have a korean boss and ate lots of korean food. Yummy! There was a spicy chicken that his wife would make that was to die for. I'd love to have that recipe but don't know the name. They called it something in korean!

I loved working for them, they were the nicest people and the best boss I ever had. And the food was yummy! I'd love to try some of the recipes.

Saving dogs, sounds like you had takalbi (sp) did it have a short fat rice noodle in it?
My fav is chop chae and spicy pork.

The chicken had like a coating that was soft and perhaps it was noodles, you are probably right. Very hot! Reminded me of some thai dishes but of course they did not agree, it was a very korean dish. They served it with just white rice. They also had kimchi more like an appetizer all the time, they always seemed to serve it.

My SIL has kimchi out at every meal, including breakfast! I read somewhere that in the old days the Koreans would have large terra cotta pots that would be buried up to the the necks in the garden, and they would make and store their kimchi there. That always sounded so practical to me. My SIL tells me that now the newest thing there is the *kimchi fridge*, kind of like a wine fridge; It keeps things at the optimum temperature, and even has zones with different temperatures, as there are different types of kimchi, with different fermenting lengths, and therefore different temps. She covets one of these, while I think the pot in the back garden sounds better

I'll bet the korean family I know has one of those....I haven't seen them in a long time since we moved away from California. He is a dentist and always took very good care of his wife, I'm sure she has all the modern conveniences.

I like that idea of a kim chi pot however. Is it mostly cabbage in it? I've never made it. My husband and I both enjoy it however, I should probably think about learning to make it. Does anyone have an easy recipe?

I've had kimchi in japanese restaurants alot too.

There are a lot of different kimchi recipes, plus summer kimchi and winter kimchi, and quick fermented, and long fermented, etc. - thus the different temps in the fridge. I haven't made any myself yet, but there is a recipe in Nourishing Traditions, if you have that book (don't we all have it by now? ). A google search would bring you dozens, I'm sure.

If you can remember more details of that dish I can look in the Korean cookbook that my SIL gave me. Unfortunately the book is both in Korean and in English, and the names of the recipes have also been translated - so I can't look anything up under its Korean name even if I know what it is, as I can't read Korean. But I can look through the chicken recipes if I have a better idea of what I'm looking for.

I occurs to me I can ask him...he is my facebook friend. He doesn't go on there very often though, but I'll try it and see.....
