Taking my first step in becoming self sufficient, right now I'm focused on figuring out how many square feet of garden I would need to sustain myself year-round with the use of a greenhouse.

Welcome.

Start with your state Extension agency website. Most have info as to when, how, maturity, yield per plant, row, etc. I'm in VA but have gotten a lot from NDSU Extension Service. You can print charts, etc.

While all of that helps with production, you really need to sit down and make a list of WHAT you like to eat and go from there. Once you know what you'd like to grow, you can then fine tune planting, preserving and enjoying. Some items I like I eat seldom, so not worth effort/space to grow. Others I love & even double plant. Some mature quickly, others not.

Plan to plant what you would like and plan to not overdo the first year. It can become more work than enjoyable. Expand slowly. Heck, we'd all order 80% of the seed catalogs and know it isn't practical or necessary -- garden porn! :lol:
