I love this pie! I'd druther have pie over cake any ol' day. I just mixed one up and popped it in the oven.

Lemon Chess Pie.

1/2 cup butter
2 cups sugar
1 tablespoon flour
6 eggs, well beaten
Juice of 3 lemons
1 tablespoon lemon rind, grated
2 9-inch unbaked pie shells

Cream butter and sugar. Add flour, then well beaten eggs. Add lemon juice and rind. Mix well and pour into 2 pie shells. Bake at 325 degrees for 30 to 40 minutes, until golden brown and set. If you only want 1 pie, cut recipe in half.

I have an old cookbook put together by the high society ladies of Charlotte, North Carolina. It is dated 1971. Everything in it is done by scratch, no mixes.

I have been cooking and eating Lemon Chess Pie for 40 years! It's soooo good, and the ingredients are almost always on hand. I read that the name probably came from "Lemon Cheese Pie" and the lemon cheese would have been another name for lemon curd, which this resembles. I need to work on developing a low-carb version of this.

Oh my gosh... I booked marked to try. My crust wont look anything like yours with those perfect finger marks around the edges though, that I am 100% sure of.

I was wondering if that was the case. Doesn't matter- I've used them too; so wonderful when you are tired and rushed.

Mmmm I shall save this for when baby arrives. I also like pies better than cakes!
