I'm looking for pickling recipes that do not use sugar. I can't very much sugar so I avoid it all together. Is there any recipe for pickling that doesn't require using sugar? I'm wanting to pickle some of my peppers and garlic and I would like to have some of it too! :)

Thanks!

If you several hours/days to spare take a look at the "what are you fermenting thread". Lots of interesting stuff, and quite a bit about pickles. I don't do many pickles, as DH is not the greatest fan of sour, but my understanding of the process for vinegar pickles is that the vinegar, and possibly the salt, are the important factors. Sugar, I think, is purely for flavor. However, as stated, I don't do much pickling (and most of that is fermented these days) so I am by no means an expert. There are people here who are, however, and I'm sure one of them will answer your question in more detail.

Oh, and :welcome
