Luck of the Irish Red Ale

Wish me luck... This evening I entered this Luck of the Irish Red Ale in a local micro brewers contest. I only had to give up two bottles for judging to enter. If I win, i could be looking at some serious dough and a chance to be able to sell my recipe to a big name brewery who knows... Sometimes, I have dumb luck but it's pretty rare.

It has an aroma profile with lavender, spice, honey and notes of thyme. Flavor-wise it is earthy and mildly bittering with a sweet, silky, honey-like character.

Day 5 - fermentation slowing to about a bubble through the airlock every 30 seconds. Should be ready to rack into the secondary tomorrow. There's a deep layer of trub in the bottom of the carboy now.

Remind me to buy a bottle of red ale here some time and show you the colour for comparison. Some of them are quite dark. It sounds like yours turned out great!

Both my son in law and daughter like it even warm & flat. They also both agreed it smells like bourbon. My son in law who spent 2 years in Ireland said it tastes like Irish Red Ale. It seems complex to me but we'll see after it bottle conditions / carbonates. Could be I'm just a simpleton also.

Sumi does this sound about right for a Irish Red Ale style of beer? My daughter claims she doesn't like beer but I think she just changed her mind.

The hop bitterness is what makes me dislike beer, I think. Maybe I should try a glass and see if that is it?
