Would anybody be interested in homemade alternatives to storebought mixes?

Here are a couple to get this started. By the way, big T refers to tablespoon, little t to teaspoon.

Taco Seasoning
1 cup dried minced onion
1/3 cup chili powder
2 T cumin
4 t crushed red pepper
1 T oregano
4 t garlic powder
2 t onion powder

Mix well. Store in airtight container. Use approximately 3 T per pound of browned ground hamburger. Add salt to taste.

Cooked Multigrain Cereal

2 cups cracked wheat
2 cups old-fashioned rolled oats
2 cups coarse cornmeal
1 cup wheat bran (oat bran, ground flax)
1 cup brown rice
1 cup sunflower seeds (almonds, whole flax, chopped walnuts)
Could also add raisins, chopped apple, diced banana

Use 1 pint (2 cups) mix to 3 cups water. Boil 30 min.

Wild River Bloody Mary Mix
46 ounces tomato juice
1 T celery salt
1 t black pepper
3 T Worcestershire sauce
1 t hot pepper sauce

Combine. Store in fridge up to 1 week.

Homemade Sweetened Condensed Milk
cup boiling water
1 cup nonfat dry milk
2/3 cup sugar

Place all ingredients in the blender. Process for 2 min. Allow to cool. Store in fridge up to 1 week.

Homemade Chai
1+ cups nonfat dry milk powder
1+ cups powdered nondairy creamer
1+ cups French vanilla-flavored powdered nondairy creamer
2 1/2 cups granulated sugar
1 1/2 cups unsweetened instant tea
2 tsp ground ginger
2 tsp ground cinnamon
1 tsp ground cardamom
1/2 tsp ground cloves

Put all in a 1-gallon bag. Mix like crazy. To have a finer, smoother mix, put in blender and blend until fine particles.

Vanilla Pudding Mix
3 cups instant nonfat dry milk
4 cups granulated sugar
1 t salt
3 cups cornstarch
1 vanilla bean

Mix all. To use, stir the mix. Measure out cup into a saucepan. Add 2 cups milk and cook over low heat, stirring, until mixture thickens and comes to a boil. Continue stirring for 1 min, remove from heat, and pour into serving dishes.

Homemade Taco Seasoning Mix
6 tsp chili pwdr
5 tsp paprika
4 1/2 tsp ground cumin
3 tsp onion pwdr
2 1/2 tsp garlic pwdr
1/4 tsp cayenne pepper
1/4 tsp salt
Stir together and store in air tight cont. Use 2 - 3 tbsp of it in place of the store bought mix.

Fajita Seasoning
4 tbsp chili pwdr
2 tbsp grnd cumin
2 tsp grnd oregano
2 tsp garlic salt

Stir well and store air tight.....use 2-3 tbsps of mix per pound. Cut the meat in strips then put it in the pan with strips of onion and green pepper. Then add 2-3 tbsp of fajita seasoning and just a couple tbsp of water. Cook fast on a high heat... add only a little water if needed, a tbsp at a time until the veggies are tender enough.

I am deffinatley going to use the vanilla pudding mix. My mom makes the best chocolate pudding. I would like to see how she does with vanilla.

Thanks for the recipes!

I have had the condensed milk one for donkey's years, but only recently tried it - and it worked! (I'm not great in the kitchen.) I didn't know to cool it, and it smelled funny, but it tasted just the same.

actually all of the mixes sound good.

I do pretty much the same for the taco mix, but I really want to try the pudding mix! Sounds great!

Hi--I think the taco seasoning does taste different. Sometimes I add more salt. I wonder if it is the missing MSG that makes a different taste. I think it's more authentic tasting (although I've never even been to Mexico!)

I think it's just different and takes a little getting used to. It's like the difference between anything storebought and homemade--it tastes different for a while until you get used to it and then like the homemade better than the storebought :)
