These are my favorite "oh crap I forgot the bread for dinner" recipe.

1 cup self rising flour (you can use 1/2 white and 1/2 whole wheat)
1 Tablespoon mayonnaise
1/2 cup sweet milk
1 Tablespoon sugar

Mix all together with a spoon and either spoon onto a greased cookie sheet or into 6 muffin tins. Bake at 450 degrees for 8-10 minutes or until golden brown.

You can also add cinnamon and raisins to this for a great breakfast variation! Make some glaze with powdered sugar and milk and yummmmmm!

To substitute for Self-Rising Flour:

Substitute using all-purpose flour:

1 cup minus 2 teaspoons all-purpose flour
PLUS 1 1/2 teaspoons baking powder and 1/2 teaspoon salt

This makes 1 cup of self-rising flour equivalent

Sweet milk is regular milk, as opposed to buttermilk or sour milk.

ETA: The historical from one of my old cookbook notes:

The term sweet milk referred to milk just milked from the cow. It had the butterfat and all in it. After churning and getting the butter out, it had turned sour and made buttermilk. So the term sweet milk was just the whole milk before any processing had occurred.

My granny always calls whole milk sweet milk so I just follow suit!

As for the flour, I usually use a mix of white and whole wheat flour for these...they just seem to be a little flakier. Tyler loves these with honey and butter!

see that...sweet milk...I didn't know that either.
in the olden days it determined what type of milk you had...just from the cow was sweet milk....COOL

you won't hear that nowadays or from the next generation mostly I am sure. so must gets lost!

wierd how the little things we say and do are just gone.



and yes, I am going to make these tonight for Tony to try.


BUT can I use 2% milk? Only cause I just switched cause Tony with the cholesterol numbers.

I don't have a clue cause I am not a good baker! thanks
