the quick version of cheesecake is to take cream cheese (blend well first), add some sweetened condensed milk and lemon juice and whip it good to get some air into it.

if you want a similar flavor and less sugar and fat you can use whole milk yogurt instead and lemon juice. i also like to add some vanilla to this. if i have any cereal or granola i like to soak that in this mixture and have it anytime.

breakfast foods are rarely just for breakfast around here anyways. most times we don't eat them at breakfast. it's like those words on packages that say, "serving suggestion". that doesn't mean you have to take them seriously...

it is so easy and nobake version, just refridgerate after mixing and pouring for an hour or two and it firms up enough. we eat this more often without any crust as just a pudding/filling.

the original recipe (from a Frosted Flakes or Corn Flakes box, named it Cherry Breeze 1970s) called for a whole can of sweetened condensed milk but i've experimented with half a can or less and also substituted some condensed milk, it all seems to work out. i prefer less sugar these days.
