I used my new cider press for the first time today! Woo hoo! It's a breeze to use, and easy to clean up.

Does anyone have a good recipe for hard cider?

You don't need a recipe, just let your apple juice sit out and it will turn to cider. Leave it too long and it will turn to vinegar.

I have a gallon of fresh cider setting on the counter right now. I added a cup of raisins to it, and a half packet of champagne yeast to help it along, and an air lock to keep out the really bad beasties.
I figure this is going to be more an apple wine than a hard cider.

Put your apple juice into a clean jar and cover it with a piece of cloth and a rubberband. Stick it in a dark place at room temp and it will do its thing. One week into making apple cider vinegar, mine was hard cider. Stir and check it everyday, because it changes quickly. Very easy!
