A wonderful cake for special occasions and tea parties.

Ohio Historical Society Rose Geranium Cake

from Bountiful Ohio Cookbook

Makes 1 10" cake

Preheat oven to 350 F.

Ingredients:

Clean and dry Rose Geranium Leaves

1 (14.5or 16 oz) package angel food cake mix (or homemade)

1/4 tsp rose flavoring*

1 - 2 tsps ground cardamom

1 c (1/2 pint) whipping cream, whipped or 1 (8 oz) container non-dairy whipped topping-thawed

Instructions:

Grease bottom of 10" tube pan. Lay rose geranium leaves upside down in bottom of pan.
Prepare cake mix according to directions on package, adding rose flavoring to batter.
Cool as directed.

In medium bowl, fold cardamom into whipped cream.

To serve:

Slice cake through leaves with serrated or electric knife, or cake divider. Top each slice with whipped cream, if desired.

*(or use 1/2 tsp rosewater & couple drops red food coloring. Rose Flavoring can be found at specialty kitchen stores and cake decorating stores)
