Two solutions.
Grate and freeze in quart bags for adding to cakes and breads throughout the winter.
Lacto-fermented zucchini pickles.

I never feel over run by the stuff. In fact, because I do the above, I never have enough!

Zucchini relish and pickles are good options too, and great for gift baskets if you have extra :)

My mother inlaw also makes a faux apple pie.
You cannot tell the difference!

I love, just love Zucchini bread. As a kid I would ask for it instead of a birthday cake..

I would love to have the faux apple pie recipe, that is if its not a family secret..

Just make apple pie, and use zucchini chunks instead.

We will have to fight over the extra zucchini.

Growing mine in a hot house next year, to get better yield...
