oyster stew(recipe I used with pics)

here is the recipe I used:

4 tbsp of bacon fat
4 tbsp of butter
1 med onion chopped
2 stalks of celery chopped
3 stalks of green onion chopped
1 pint of oyster with juice
1 pint of heavy whipping cream
1 pint of whole milk
salt,pepper,garlic powder,and crushed red peppers to taste
ground parsley for garnish

melt fat and butter
add onions and celery until translucent
add oysters only until oysters start to curl around the edges
add milk,cream,oyster juice,green onions and spices

heat through until oysters begin to float DO NOT BOIL

serve hot with crackers or french bread

I am not sure What you mean by oyster stew my mother cooked two versions the simple one was just oysters cooked lightly in their own juice and milk and sometimes butter added and just warmed. the more fancy [streched] version had finely diced potato which she overcooked in the juice for their starch content and diced celery and carrots cooked in that along with oysters and finished with milk and butter. the second version was thickened by the potatos and was somewhat like New England clam chowder. Our family liked the simple one best. Do you need to be warned not to overcook the oysters?
