PLEASE share your all time favorite water bath canning recipe?

Canning Summer Squash

Wash squash, do not peel. Slice into 1/2 inch slices, then
halve or quarter them to fit into jar. Pack tightly in jars and
cover with boiling water to within an inch of the top of the jar.
Put lids on. Process jars for 25 mins for pints or 30 mins for quarts.

Canning Lemon Juice

If you grow your own lemons, or find a great deal on them you can make your own "bottled" lemon juice.

To can the juice, heat the strained juice to 165F; do not boil. Then ladle it into hot sterilized jars, leaving 1/4 of headspace. Process the pints or quarts for 15 minutes in a boiling water bath canner.

Canning Grape Juice
From The Ball Blue Book

1 cup grapes (washed and cleaned)
1/8 cup sugar

to each quart jar

Fill with grapes, tightly packed.
Add boiling water, stir sugar in
Fill to the neck of jar
Add lid and ring
Process in boil water bath for 15 minutes.

Thanks for adding more recipes, I hadn't checked the post in a while.
Yum, can't wait to try some of these recipes.

Has anyone sub'd Splenda for their jam recipes? If so what variety, the granular or the baking type (still has some sugar in the one for baking).

:( ......but some of us can't have sugar.... :th

You can make sugar-free jam using Splenda instead of sugar; but only if you use one of the following pectins....
Sure-Jell No-Sugar needed pectin
Ball / Jarden No-Sugar needed pectin
Pomona Universal Pectin

Make sure you follow the directions that come with the pectin for best results.
