We had a similar issue with a butcher we had our first year. Then we found out that they took a percentage of OUR meat to sell in their coolers. Not just ours, but everyone's. This was NOT advertised. We have since found a great butcher...and will use them from now on. ( unless we have issues) However, I know several people that use this butcher, and they come highly recommended. Im so sorry this has happened to you....I would ask for a refund, on the "other meat"

With a business like custom butchery you MUST have the trust of the farmer. When that fails - so does your business.

I would definitely voice my concerns - probably in writing with a copy to someone VERY official. Most small butcher shops are state inspected if not USDA inspected.

I have been very fortunate here. The butcher shop that we use is family owned and has been operating in the same area for about 50 years. That is a LOT of hard work and farmer trust.
