Recipes that use Maple Syrup, please

I have an over-abundance of maple syrup in my cupboard and my DH is bringing home 6 more pints. We only use maple syrup on pancakes and oatmeal.

Anyone willing to share a favorite recipe that uses maple syrup as an ingredient?

My favorite is oatmeal a little peanut butter and maple syrup. Stir into the oats when still hot.

Sitting down here in Texas, the Land Of No Sugar Maples...….that sounds like a terrible problem to have! :\

I found a recipe for Granola that has maple syrup as the sweetener. It is really good. I adapted it to my tastes - no nuts, no craisins, no coconut. I used Rolled Oats, Rolled Barley, ground Flax, roasted sunflower seeds, roasted Pumpkin seeds, golden raisins, dried tart cherries, and chopped Dates w/ Oat flour.
Now I just have to tweek the recipe a little bit to make it clump together instead of having to eat it with a spoon...

I wonder if you could make some version of a maple syrup pie? Maybe find a recipe that calls for lemon juice and substitute maple syrup? Oh! I know! Make a pecan pie, use maple syrup instead of karo syrup!

I usually add some to ham and sometimes chops.
You can use it as a sub for honey in a lot of recipes that don't use a lot of it. That way you get the sweetness without an overpowering taste of maple.

Maple Meringue Cookies

4 egg whites
1/2 tsp cream of tarter
1/8 tsp salt
1 c. maple syrup

Beat egg whites until soft peaks. stir in cream of tarter and salt. SLOWLY add maple syrup as you beat until stiff peaks.
Spoon onto parchment paper. (I like to pipe the meringue out)
Bake at 225 degrees for 1 hour.
Turn off oven and leave in oven for 3 hours or overnight. Do not open oven.
Move to sealed containers right away when you remove from oven.

I like small, bite sized meringues. This recipe will make 4 cookie sheets of 1" meringue cookies.

I made the Granola recipe from Marianne's post above. I really like it!

INGREDIENTS
  • 1/3 c .pure maple syrup*
  • 1/3 c. honey*
  • 1 Tb. vanilla
  • 1/2 c. oil (melted coconut oil, cold-pressed sunflower oil, or avocado oil)
  • 5 c. whole, rolled oats
  • 1 c. chopped almonds or walnuts
  • 1/2 c. sunflower seeds (sesame seeds are good, too)
  • 1/2 c. flax meal (or 1/4 c. flax + 1/4 c. wheat/oat bran)
  • 2 tsp. cinnamon
  • 1/2 tsp. salt (omit if using salted sunflower seeds)
  • optional: 1-2 c. dried fruit mixed in after cooling

My changes: - no nuts. I am not a huge fan of nuts.
- no cinnamon, no salt
- 1 c. each of roasted sunflower seeds AND pumpkin seeds mixed in with the grains mix
- my fruit mix-ins are 1 c. each of dried tart cherries, golden raisins, and Diced Dates with Oat Flour. last batch included diced, dried apricots.

Pressing it into the pan and not stirring while baking does make it stick together better - not perfect, but good enough that it isn't a spoon meal. I probably didn't press it together hard enough. I will try better next time.
