Rose hips, what can I do with them?

I have a lot of mature rose bushes around my property that are loaded with rose hips. I have read that some rose varieties are better for their hips than others. Are there any varieties of rose that hips are not usable on? The ones we have are the wild/beach type of varieties, and some of the plants have hips that are an inch thick. I'd love to use these for something.

I've read about making tea and jelly, and want to try both.

What else do you make with rose hips? Any recipes or techniques you'd like to share?

I have a bumper "crop" this year as well, so asked nearly the same question last week

The advice given was to harvest after first frost (or harvest as late as possible and freeze before using) and Neko-chan noted that she had made a few posts in the past:

It is the fruit and seed that grows after the rose flower dies.

Juice, jam... wine, it really is pretty damn good.

I would love to make wine, we have plenty of rose hips. We brew our own beer and mead, and enjoy it! It would actually make a nice mead, which is also good for anyone who's gluten intolerant and can't tolerate beer.
