I picked up 2 heads of cabbage at the farmers market yesterday and got my pickling salt. I thought I was ready to go between my gallon glass jar and my crock pot to put it in. My question is, we keep our AC set at 78*. The recipe I was looking at said that it needs to be kept cooler than 75*. So now what do I do?

The warmer it is, the faster it ferments. I never had an issue with it getting warm in the house during the summer when I made any of my fermented foods. (We don't have ac and sometimes it gets up to 80 degrees in here during the day.)

Just keep an eye on it and do frequent taste tests.

I'm doing a big batch of fermented pickles as we speak. YUM!

Okay, thanks! That makes me feel better! This is my first foray into this. I wasn't sure how precisely I needed to follow directions to avoid problems. Back to setting up the food processor :) .
