I am sure you already know this but just in case we have a newcomer reading.... If the tops ping AFTER they are cool it means that they did NOT seal right. A proper vacumn in the jars should deliver a sound more like a thud than a ping. ~gd
But if they ping while they are cooling thats good right?

Yup. :D Mine often ping while moving them from the canner to the towel. I've had some leakage during canning but as long as they sealed they should be just fine. Mmm applesauce.

I learned the hard way also to remove the rings 24 hours after taking the jars out of the canner. There are some even SO cannot open. I usually have some seepage during canning, but as long as those lids pinged while cooling, they are ok. I also do the lift test after I remove the rings. I grab the lids by the edge and lift the jar, carefully. If the lid does not come off, it is good to go. If it comes off, it goes in the fridge to be used soon. Or recanned in a new clean jar and lid, if I am doing more right away.
