My grandmother in law was one of the original SS gurus. She made the most awesome biscuits. She was always willing to teach you how she did things so she showed me how she made biscuits. At room temp she kept something she called hard cream. That was the secret to her biscuits.

Over the years I finally decided it must have been homemade sour cream. She made her own butter etc. I don't know how she did it. She may have used a culture that had been passed down a long time. I don't know how long she kept it at room temp but food turned around pretty fast at her house. It was a better product than anything you can buy.
