So, as you likely know, we have gone from a 1600 sq ft house on almost a half acre to a 2 bedroom apartment in the suburbs, and FAST! We are making the best of the situation, and are happy, but our way of life has changed drastically! (No chickens! No garden! Well, 2 tomatoes and a bell pepper in old repurposed buckets...) We have a decent amount of storage, but not what we are used to. We could probably use up a pantry twice the size of what we have! Does anyone have advice or tips for being as SS as possible in limited space?

You can store stuff under the beds. If they're not high enough, either make or buy something to raise the level.

If there's any local farms that pack and ship produce, see if they have "2nds". Lots of times, they'll be a bit soft, bruised, etc but are fine for canning, dehydrating, etc, and they're way cheaper than what they sell the "good" stuff for.

Definitely find the best places for local produce to put up (canning/dehydrating/freezing--whatever you usually do). Same with local meat, grain, and dairy; get to know the people around you and barter your skills for what you need wherever you can.

Really think about your space, you can always find a small corner somewhere for whatever you need to store. And don't be afraid to purge things you really don't need:

Have nothing in your house that you do not know to be useful, or believe to be beautiful William Morris
