Summer Squash recipe

I don't have a name for this recipe - we call it "that yummy squash and corn stuff"

Ingredients:

equal parts sliced squash, onions, corn
a few cloves of garlic, minced or sliced
butter or oil
salt and pepper
cheese


This recipe is a guideline, adjust to your preference

Caramelize your onions in skillet - use however much butter you want. I like to salt them a bit to draw out the moisture.

Remove onions from the pan and put in the sliced squash (I cook the squash and onions separately because the squash disintegrates if you cook them together)

Add a well drained can of corn, or the equivalent measure of fresh corn.
Cook off as much moisture as you can so it doesn't get soggy before eating.

Once the squash and corn is browned to your liking, add the onion and a few cloves of sliced or minced garlic, remove from heat quickly so the garlic doesn't burn.

Top with shredded cheese - we like colby or sharp cheddar, allow to melt and enjoy
Salt and pepper if you prefer.
