Tarragon Chicken Salad

We had this at a country inn in Vermont several years ago and it is one of the few dishes my DH will make when he wants it.

TARRAGON CHICKEN SALAD

1 chicken breast, baked, then diced in large chunks about 1/2 to 3/4"
1 apple, diced with skin on
2 tsp dried tarragon
1/4 c miracle whip - more or less for creaminess desired
Mix together and chill for a few hours.
serves 2

We had this served with a broiled tomato half with basil,
a steamed zucchini half then topped with a hunk of premade stovetop stuffing,
and a date nut muffin.

This recipe sounds yummy! We don't eat poultry anymore, but we used to go to a small French bistro place in Houston that had the best Turkey Tarragon Salad! But they used mayo instead of miracle whip dressing. Fresh tarragon is perfect with poultry.

I think the miracle whip is used for a tangy component.

I love French bistros! It's amazing what they can do with simple ingredients. I frequently get the latest Bistro books from our library and adjust the recipes to my lighter tastes.
