THE SQUIRREL CHALLENGE: Want to join?

My progress: I now have four of my one year meals stocked and about 3 others half done. So that is enough for about 60 days worth of food, at least, that we could eat without having to leave the house at all.
 
Did I miss it? What is a one-year meal Pam?


Last night I made 14 half pints of peach jam - (7 for barter & 7 for storage)

Trying to use up any of last years frozen fruit.

And a "cheese practice" mozzarella cheese and lemon thyme ricotta.
 
I went to Wal-mart and got 3 cases of pint jars....no one seems to be giving or selling used pint jars, just quarts, and I needed some pints for the catfood. DH is leaving now to get the chicken and livers for my last batch until fall, I will finally have enough jars to have 150 jars done!

I also got a box of 4 oz jars for homemade goats' milk cremes and fancy face creams and deodorants that are being requested by friends and family. I just won't do all that work and then pack it in plastic!

Jarred and labelled the last of the nettles and raspberry leaves, and scouted another wild patch of raspberry to pick when the rain stops and the sun comes out. Using dh's car as a dehydrator worked great!

And waxed and stored another 4# cheddar.
 
Wow!!! You guys are doing great. I think in the next couple of months I am going to be a canning fool. I plan to check out my local farmers market for some of the things I am not growing. I hope to find some deals.

I did pick up the two cases of seals, and a case of low sugar pectin a couple weeks ago at WMart. I wanted to be sure to have enough on hand.

I am also stocking animal food. Chicken, and dog.

Not much to can here lately. I need to get back on track! I'll never be able to keep up with some of you-not enough space or $$! I hope to go strawberry picking this spring. I haven't managed to pull that off since before my son came along!

This year I will be much more conservative on throwing away or just tossing to the dogs, the organs and good parts of deer and the calf I will be butchering, not to mention the chickens.

I am going to start freezing these things.....when I get a big batch and, if I have any empty jars by the end of the summer, I am going to cook a big pot of organs, bones, garlic, onions, salt and rice. Gonna can up that stuff for supplemental dog food. I know it would be better to serve it raw, but its still better than dry dog food from the store. I'm also going to ask other people to save me their left over meat scraps from deer kills and such.

Anybody for liver, kidney, heart, marrow, lung, tongue soup??? :P
 
Nah.

But kidney pie or tongue sandwiches, liver and onions or heart sliced really thin breaded and pan fried with a side of fry taters and onions! YUM :drool

Sorry ... stuff like that is hard for a hillbilly like me to share with the dogs! :D
 
LOL, I'll pass! I will eat organ meats in something like Scrapple. I think it was the dog food reference that might have done me in there! ;)
 
I don't use the organ meats in Scrapple - no, no.

You make proper scrapple with the pigs head, neck bones and maybe trotters!:D

Scrapple for breakfast - dipped in batter and fried with over easy free range eggs. :drool

Will you guys EVER stop making me hungry?

:lol: I've only had store bought. Can't get it up here. I have a friend who visits Bethlehem PA every other month or so and brings me some. I have to share with my mother though. What IS it about that stuff that makes it SO good???
