It is best to age your bird 2 to 3 days in a refrigerator before freezing. It allows the meat to go through rigor mortis and makes the meat far more tender. That is for another time.

I am VERY proud of you both! With the first one under your belt now you are well on the way to becoming regular sustainance farmers. :D
