Veggie stock

Any recipes on how to make it? I like to cook with it because my hubby won't eat veggies if he can see them so everything gets liquefied so it can't be picked out.

Our local grocery store doesn't carry it any more.

You can save the leftover cuts of veggies like onions and celergy, and freeze them, and when you have a whole bunch, you can cook them similar to chicken stock as far as I know.

I'd just make chicken stock with veggies in it, but that's me :)

I chop 2 onions, 2 carrots, 2 stalks celery with tops into quarters along with any other veggies that are kicking around, including trimmings (I keep bits in a bag in the freezer), cover all veggies with water, simmer 2 hours, strain veggies out, make soup :)

Thanks y'all. Hubby just has a thing against veggies...... If he can see em he won't eat em.
