Weeds: An untapped resource.

I haven't seen the honey but, I have seen the Kudzu blossom jelly. It has a slightly sweeter honey like taste. I'll look for it though when I visit the mountains this summer. Usually lots of vendors with unusual concoctions.
 
Have you heard about the people making ethanol out of kudzu? Apparantly they say it is much cheaper and easier than trying to make it out of corn and since the kudzu grows so fast it really could be profitable in the future as an alternative energy source.

You'll see it in farmer's markets down south labeled 'Smurf Food' :gig
 
Smurf food...I did see that! I thought it was jelled kool-aid or something!

Yes there has been some research into using the Zu as ethanol because it yields higher amounts than corn. I would expect harvesting would be difficult though. At the Kudzu farm they used a custom made tool hooked to the tractor that had long metal spikes to pull it up and bale it.
