I got ambitious this morning and thought I would whip up my first batch of homemade mayo and then season it and put it on some cabbage for slaw. I didn't give it a second thought and used my coconut oil rather than olive oil as the recipe called for.

Looked great, popped it in the fridge 'cuz I was runnin late for church. Got ready to make dinner, got out the shredded cabbage, got out my yummy, creamy mayo, only to find out that it tastes great... but has the consistency of the smoothest, creamiest cream cheese!

I am so laughing at myself :lol:.

Congratz! I made my first batch of mayo last week. It's somewhat questionable regarding consistancy, but not bad at all!
