What all can ya do with nectarines?

How do YOU put them up? I plan to dry some, but no idea what to do with the rest. We have about a bushel, and they are SO juicy and GOOD :drool We are eatting a bit of them fresh too ;)
 
I love them in jam. For me I prefer them over peach and you don't have to peel them. My sis makes leather with them, yummy!
 
Yup, ditto the easy no-peel jam :)

We also like them dried, and if you peel them canned--peel, half or quarter, pop into quart jars, dump in 1/3 cup sugar, cover with boiling water leaving 1/2" head space, process 20 minutes :)
 
Our tree is empty this year. Not one single nectarine. Our peach tree has a few but not many.
 
Anything you can do w/peaches, you can do w/nectarines, whether it's make jam, cobbler, dehydrate them or whatever. We've made the "cobbler" w/out the cobbler part, frozen it, then served it warm over ice cream B4. :drool
 
Thanks all. I was thinking they were basically the same as peaches as far as putting them up, but it is not a fruit we frequently get here, so I wanted to be sure. They are YUMMM! I will have to dry them longer though, as they are much juicier than the peaches we usually get.
 
We're making the Indian drink lassi with frozen peaches. It's basically 1 part yogurt, 1 part milk, 1 part fruit. You can add sugar, nuts, etc. to customize it. (Traditional lassi has no fruit in it and is flavored with salt and spices.) Course, I'm assuming you have space in your freezer, which may not be the case. We put up 3/4 bu and it was probably 4 gallon bags if I remember correctly. Maybe I'm off there, but it's a significant amount of freezer space.
