What are you fermenting today?

Wifezilla, how exactly does mead taste? I've been told everything from sheer ambrosia to vinegar flavored honey.

Done improperly, you will get vinegar.

Done right, it is very delicious. It can be dry or it can be sweet. It all depends on the type of yeast used, the quality of the honey, how long you boiled it before pitching the yeast, whether or not you skimmed it while it boiled, etc...

The biggest thing is whether or not you sterilized your equipment properly and if there are any wild yeast in your mix. Off flavors come from the wild yeast.
 
For those who want a thicker homemade yogurt; add a few opened probiotic capsules to your culture and stir before adding to warmed milk. It sets up faster with these, too, and great taste.
 
I just got a call back from the vintner's supply place. I explained that I wanted to make various fruit wines. He was very helpfull and made several suggestions of different types of yeast. He is emailing fact sheets on them.
The price he quoted me on one was around $16 for one batch and that would be good for 1,000 gallons. I might have enough to share :lau

BTW Y'ALL, I FOUND KOMBUCHA TEA, ORGANIC AND RAW AND I AM SO EXCITED!! So I can now make my own tea!!

Easter just died in my arms. I cleaned up my room to get rid of her droppings. Susie will probably be looking for her when I bring her in later. :(
I am going to see about getting a necropsy done. Well I just found out that the state doesn't do that anymore. They ran out of funds. Oh well.
I just hope none of our other chickens get sick.

I've been trying to get around to canning my peaches all day and it's just been one thing after another. Now it's high time I start fixing dinner as well as doing the evening feeding round.
