@CrealCritter If you were closer I would get you some cuts off our apple trees.
I'm not sure what type of apple they are as they came with the house, but a friend who is into making apple Cider says the apples from our trees make the best cider. Not so good for baking though, as they turn into apple sauce when cooked.

Almost sounds like you have a Fameuse apple tree? Do the apples.look like this?

That may be it! The description is pretty close, though it is more of a yellow/green apple with red stripes and it is best the first week of August, not October. To eat fresh, it has to be slightly underripe - a more green undertone than a yellow look to it. When ripe (turns yellow) it is more of a mushy, juicy apple, not really any crunch to it like you get from a red delicious.

Look like these?

Exciting! My one successful graft (a cherry) from last year didn't survive the winter. The rootstock from the deer chomped apple tree got ran over by hubby in the tractor, but I'm hoping it comes back. If it does, I can try grafting it next spring. There's another deer chomped peach that might have died back to the rootstock, so I'm hoping that too will come back and I can try to graft it as well.

The other problem here has nothing to do with the zones. If the tree/plant can't tolerate alkaline soils, it doesn't matter how cold hardy it is, it won't survive here.

it was just an example. they seemed to have good info.

wanted to add Siberian C is also used for cold hardy root stock and it's said to produce true from pit. Makes the variety appealing to me.

The information I found is "was used for cold hardy root stock and reproduces mostly true from the seed". I suspect finding anything more than someone who claims to be willing to sell you seeds for $25 each is about as far as it goes now.

@R2elk some more info for you. I asked a couple friends and the replies are starting to come in. so perhaps more to follow?

Recommended to paint the trunks white with watered down latex and shelter the south west side from direct sun. I provided that info in one of the above links for you already though.
