what do i do with all these persimmons???

they started falling out of the tree! i didnt even know what they were - so what do i do with them? they are the little ones...

The tree is probably shedding extra fruit in an attempt to self prune.
Is it a native or an Asian Persimmon?

My native Ohio persimmons aren't ready until they turn nearly black on the tree. I picked at the orange stage but they were persimmon pucker bitter. I dried them in a window for a few weeks and they were much better. Still, this year I won't be over eager and wait for a few frosts, shake the tree and use what falls.
I am still gathering them in December and January from the tree. I set an old sheet under to catch as they fall on their own, too.
Before you get too involved making something from them, taste them first. You'll know immediately if your mouth puckers - they aren't ripe.

I put them in my morning smoothies and this year I have a recipes for sugar plums that I am looking forward to trying!

I think everyone with a Persimmon tree should experience the pucker once, lol!
When they are ripe they taste like stuff dreams are made of! Absolutely sugary and fragrant and wonderful. I am thrilled with my tree!

persimmons put'em ALL in a bucket and take them into the hunting land, dump them out, get into a blind and wait patiently, old bucky or his bride will be by shortly and "BANG" you got dinner. If its legal of course,if its not then go deeper into the woods. just kidding of course.

Oh that pucker I've got sooo many friends with it. I'm with you, though firem3, they taste like the bottom of a chamber pot to me, even the ripe ones. DH loves them though...

Quick online search found recipes for jam, jelly, cookies, cakes, breads, syrup. Pretty versatile fruit.

My neighbor has persimmons. Not the ones that look like roma tomatoes but the round flat kind. anyways, we eat them like apples. Not sour at all. I know some people prefer to wait for them to soften up but I liked it firm. I just sliced them up and my kids munched away.

I really just got hoked on them last year. This year I may try to make a chutney or something. Let us know what you end up making.
