What's for dinner?

I tried to make butternut squash soup last nite. I had my home canned broth, cut up one of my garden butternuts, used some dehydrated celery and carrots, and spices. Got it all into the pot and could not for the life of me figure out how to make it work. I was tired and irritated so I put the pot into the frig, opened up two cans of soup, and made grilled cheese sands for dinner.

Sounds like a good start. I've made it before by cooking the squash and extras until really soft and reducing the broth a little at the same time. Then I hit it with the immersion blender and added some cream to thicken and make it yummy (maybe even a little softened cream cheese if you like that sort of thing). It's always turned out pretty tasty!

We like "warm" spices so I generally use a little cumin, maybe a touch of smoked paprika... Let your imagination run wild, lol!

Let us know what you decide to do with it!

Immersion blender. Hubby just got me a big restaurant sized one to use for soups
