Be patient....my dh is coming along quite nicely. He may never actually participate in any processing, but he now actually looks forward to new projects....which is a HUGE change of attitude. And he is helping feed and care for the meat critters, which I would be ok with doing it all myself if he wasn't able to eat critters he got to know...but he is ok with it now.
It took about 4-5 years, I think, from my first suggesting we get meat birds to this new attitude. It took about 2 years from my first suggestion to actually have our first meat birds....two turkeys (because "turkeys are ugly!)
When I let a hen go broody for the first time, I told him that we could not keep all the roosters and that my dad would be killing them....and did he want me to allow the hen to set? Yes, he said, but HE would not eat the chickens. Well, by the time they were obnoxious roosters, tearing up his beloved laying flock's backs, he ate them with us.
Now we have our first actual meat birds bought on purpose for meat and the two pigs.
Give him time and let him think he has a small say in the matters. But also let him know you expect his support in your interests and project, even if he does not want to participate...he can keep his negative comments to himself, because it hurts your feelings.
