Red or green cabbage or mixed grated
couple of grated carrots (optional)
Dried currents (they are smaller than rasins and don't have the startling sugar and flavor hit. More sublte. but if I'm in for a big rush I use dried cranberries, I usually chop them up smaller)
enough mayo to moisten
Stevia 7 to 10 drops ( you don't have the stevia aftertaste in this recipe)
Chopped walnuts
chill.
Except for the cabbage, and the stevia (the carrots are sweet enough) this is basically the carrot salad that I make. More carrots, of course, and I thin the mayonnaise with some yogurt. I also add some toasted cumin seed, and some celery seed. I need to remember to add cabbage next time :)

Shredded carrots and rutabaga. Finely chopped brocolli. Canned crushed pineapple in juice. Mayo. Sea salt and ground black pepper. Stevia if needed, sweetness varies in rutabagas.

Garnish individual servings with sunflower seeds.
