Your Favorite Tomato Sandwich Recipe?

OK so maybe recipe is the wrong word, but tell me what is your favorite way to make a tomato sandwich? I have some pink Brandywines that need to be eaten!

I am new to the mater sammy so here is my take on it:

Slather bacon grease on both sides of the bread and grill it. Let it cool briefly, swipe on mayo, add pepper, a slab of tomato and then a healthy sprinkle of kosher salt then top with other slice of bread.
O am thinking a slice of swiss, slightly melted would be a nice addition.
There is something really yummy about the bread grilled with the bacon grease :)
Please share your favorite way!

On homemade Spinach/Feta/Tomato/Basil bread put slices of

Home grown German Johnson or Brandywine tomatoes
Locally produced Havarti cheese
Fresh basil or thyme or tarragon

Grilled in unsalted butter in a skillet on top of the stove until first side is golden brown. Flip and repeat.
YUM!

My BLTs ar just lightly toasted bread, slathered with mayo, tomato sliced thin, salt and pepper , bacon, then lettucemore mayo and thn the othr slice of bread. smush together so you can actually fit it in your mouth. My son does not like tomatoes, so he substitutes cheddar for the tomato.

OK KJma...gotta ask for the bread recipe! I am not a huge feta fan but that sounds just delicious!

How do you have tomatoes this late? Greenhouse?

My favorite tomato sach:

Cheap white bread
Mayo spread thinnly on both slices
Tomato cut almost half an inch thick
Salt


Optional:
dill pickle slices
cheddar cheese, thinly sliced
fresh ground black pepper

(I like the idea of grilled bread)

I also make something like focaccia bread

A loaf of french bread, cut lengthwise, so you have a big surface to work with.

Spread both sides with butter and top with:
Sliced tomatoes
thin sliced onions
bell pepper strips
garlic crushed or diced finely
fresh parsley (or other herbs to taste) torn up or minced
thin sliced of cheese (provolone, parmesan or even cheddar-but just enough cheese so you can see it, not too much.)

Toast in the oven til the butter & cheese is melted. Serve it like garlic bread.

Well heck, I am a simple girl. Bread, tomatos, mayo - Served with a very large glass of milk.

Cassandra, I am in southern California :) so yep I still have some maters.

Your garlic bread sounds yummy!

Edited to add that I just gobbled one down :) I grilled my bread, added a slice of swiss to one side topped with fresh basil from the garden, sliced brandywines, course salt and mayo on the top slice of bread. Delish!!

You might also try it with cream cheese and basil. :)

Spinach, Feta, Tomato & Basil Bread

1 1/8 cup warm water
1 cup chopped frozen spinach -defrosted, squeezed dry
3 Tablespoons olive oil
4 cups bread flour
6 oz crumbled feta cheese ( I use Athenos brand with Tomato & Basil)
1/2 Tablespoon dried basil
1 1/2 Tablespoons dried chopped tomatoes
1 1/2 Tablespoons sugar
1 teaspoon salt
2 3/4 teaspoons yeast

Mix in bread machine using dough feature. When done, remove from machine and divide dough in half. Flatten and roll each half and place in greased bread loaf pan. Let rise until double in size. Bake at 350 for 20 to 25 minutes, until top is golden brown and bread sounds hollow when tapped on bottom. Remove bread immediately from pans and place on cooling rack. Cool completely before slicing.

If mixing and baking bread in a machine, program for medium crust and basic bread setting. This recipe is not suitable for use of delay timer.

eta: If you didn't tell someone the feta was in the bread, I don't think they would notice it.
