Yummy Pumpkin Bread

Pumpkin Bread
1 (15 ounce) can pumpkin puree
4 eggs (used 4 small duck eggs)
1/2 cup Canola oil
1/2 cup unsweetened applesauce
2 cups brown sugar
2/3 cup white sugar
3 1/2 cups all-purpose flour
2 teaspoons baking soda
1 1/2 teaspoons salt
2 teaspoons ground cinnamon
1 1/4 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/4 teaspoon ground ginger
1 cup chopped walnuts
1/2 cup raisins (or more :) )

Grease and flour two 9x5 inch loaf pans (I did one of those and 3 mini loaves approx 3x5). Preheat oven to 350.

In a large bowl, mix together pumpkin puree, eggs, oil, applesauce, and sugars until well blended. In a separate bowl, blend together the flour, baking soda, salt, cinnamon, nutmeg, cloves, and ginger. Stir the dry ingredients into the pumpkin mixture until just blended. Pour into the prepared pans. Bake for approximately 1 hour and 10 minutes (or 40 minutes for mini loaves). Loaves are done when toothpick inserted in center comes out clean.

This is the one I usually make....although not strictly a pumpkin bread.

A TO Z BREAD

2 c. sugar
1 c. oil (or 1 c. applesauce for low-fat)
3 eggs, lightly beaten (or egg substitute for low-fat)
2 c. A to Z ingredients (see list below)
1 T. vanilla
3 c. flour
2 t. cinnamon
1 t. baking powder
1 t. baking soda
1 t. salt
1 c. chopped walnuts, optional

A to Z Ingredients
Apples, peeled and shredded
Applesauce
Apricots, dried and chopped
Bananas, mashed
Blackberries, unsweetened, fresh or frozen
Blueberries
Carrots, shredded
Coconut
Dates, pitted and chopped
Figs, dried and chopped
Grapes, seedless, chopped
Oranges, peeled and chopped
Peaches, peeled and chopped
Pears, peeled and chopped
Pineapple, crushed, canned and drained
Plums, peeled and chopped
Prunes, pitted and chopped
Pumpkin, canned
Raspberries, unsweetened, fresh or frozen
Rhubarb, chopped, fresh or frozen
Strawberries, fresh or frozen
Summer Squashes, peeled and grated
Sweet potatoes, cooked and mashed
Winter Squashes, cooked and mashed

Preheat oven to 350F. Grease and flour two 8x 4 pans or a Bundt pan.

In a mixing bowl, combine sugar, eggs and oil and mix well. Stir in A to Z ingredient of your choice and vanilla. Combine dry ingredients and stir into wet ingredients just until moistened. Stir in nuts, if desired. Pour into prepared pan(s).

Bake in preheated oven for 55 to 65 minutes or until tested done with toothpick (inserted in center comes out clean). Cool in pan 10 minutes and remove to cool completely. Wrap and let mellow overnight. Serve the following day.

Both recipes sound great! Here is mine:

Pumpkin Breadmakes 3 loaves
3 cups pumpkin puree
cup vegetale oil
cup applesauce
2 cups white sugar
6 eggs
4 cups whole-wheat pastry flour or AP flour
1 t baking soda
1 t salt
1 t ground cinnamon
1 t ground nutmeg
1 t ground cloves
1 t baking powder

1. Preheat the oven to 350 degrees F (175 degrees C). Grease and flour three 9x5 inch loaf pans.
2. In a large bowl, mix together the pumpkin, oil, sugar, and eggs. Combine the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves; stir into the pumpkin mixture until well blended. Divide the batter evenly between the prepared pans.
3. Bake in preheated oven for 45 minutes to 1 hour. The top of the loaf should spring back when lightly pressed.

Note: Mini chocolate chips, chopped nuts or whole fresh/frozen cranberries make great add-ins.

Can cut this recipe in thirds for only 1 loaf of bread. Also makes wonderful
muffinsjust bake 20 min instead of 45-60.

Hey, Wifezilla, that pumpkin roll looks good. Ha ha . . . pumpkin with cream cheese . . . you can't go wrong. ;)

How long can you freeze tightly wrapped (several layers) sweet breads? I was thinking yesterday about the baskets I want to make up for Christmas gifts, and wondered how early I can start baking. Thanks....
