Always doing laundry
1 1/2 cups all purpose flour (I used whole wheat flour)
3/4 cup sugar
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1 egg, lightly beaten
1/2 cup vegetable oil
1/4 cup milk
1 tablespoon lemon juice
1 teaspoon vanilla extract
1 cup shredded peeled zucchini
chocolate chips
nuts
Directions:
1. combine dry ingredients in a bowl and mix well
2. combine wet ingredients in another bowl and mix well
3. stir wet ingredients into the dry ingredients just until moistened
4. fold in zucchini, chocolate chips, and nuts
5. fill greased or paper lined muffin cups 2/3 full and bake at 350 degrees for 20-25 minutes or until muffins test done
I did these in mini muffin tins and my children devoured them in a few hours! IF they last long enough, these would also freeze well.
