zucchini chocolate chip muffins

1 1/2 cups all purpose flour (I used whole wheat flour)
3/4 cup sugar
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1 egg, lightly beaten
1/2 cup vegetable oil
1/4 cup milk
1 tablespoon lemon juice
1 teaspoon vanilla extract
1 cup shredded peeled zucchini
chocolate chips
nuts


Directions:
1. combine dry ingredients in a bowl and mix well
2. combine wet ingredients in another bowl and mix well
3. stir wet ingredients into the dry ingredients just until moistened
4. fold in zucchini, chocolate chips, and nuts
5. fill greased or paper lined muffin cups 2/3 full and bake at 350 degrees for 20-25 minutes or until muffins test done


I did these in mini muffin tins and my children devoured them in a few hours! IF they last long enough, these would also freeze well.

Thanks for this and the oatmeal cookie recipes, they sounds soooo good,:drool and a great way to get non-veggies eaters to eat veggies.

Off to the kitchen, feeling like Iam chained to the dare stove.

Thanks for that yummy-sounding recipe. I notice most recipes using zucchini say peeled - I shred my zucchini for bread unpeeled. Maybe I'm crazy, but I enjoy the little dark green bits showing in the bread. Any reason I should be peeling them?

KC- I never peel mine either, always heard that part of all veggie nutrition value was in the peel, could I have been missinformed all these years? I too like the look of the little green bits.

I like it unpeeled too but if you are trying to sneak it in for the kids then peeled is the way to go. My chickens and ducks get the peels so it doesn't go to waste.

You could do it either way, just a matter of preference really. :)

Oh, I forgot - since my baby is 43 years old, I forgot how sneaky you have to be to get them to eat their veggies. Mine went through a stage when it was only chicken and stars soup or nothing.
