A dozen pints of tomatoe sauce (Yay! the last of the year I think!) 4 half-pints of roasted red peppers, 2 half pints of plum jelly (not worth the effort) 4 quarts of apple pie filling, and 3 pints of apple sauce. Oh, and a dozen pints of green beans. Whew!

I now have 50 pints of green beans.
And the beans just keep growing! I have to go pick them again.........

I'm prepping for fruit ketchup. I can't wait to try it! It uses tomatoes, peaches, apples, garlic, onions and lots of seasonings. Everything is chopped. I just need to cook it down, strain it and can it.

That sounds really good.
I love curry ketchup, does anyone ever can that? Its hard to find in the grocery stores where I live.

Just pulled 7 quarts of vegetable soup out of the pressure cooker.

16 different beans, fresh corn off the cob, some carrots, onion's & potato, a little celery & fresh tomato's from the garden. ;)

Just looking at it is making my mouth water!

I finally got to my crabapples. The deer had cleaned all the lower branches but I still had enough for a batch of butter and jelly. I also used the leftover pulp from the jelly to double my batch of butter, making 6 pints instead of 3. The jelly uses additional pectin and recipe is customized for higher altitude issues. Both came out super yummy!

4 more pints of tomatoe sauce, and 5 half pints of roasted red peppers. They are so good on burgers, sandwiches, in hummus, in salads, blended into the dressing..... too bad they are so time consuming.
