How do you skin your potatoes?

Was in a discussion with some friends about peeling potatoes. Again. This was a friendly conversation and now I'm curious. How do you all remove the skins?


I've been paring them with a knife since I was 7 for at least one meal a day. Lots of practice makes for fast thin peels. The only time I've ever cut myself doing them was using a veggie peeler.

The skin is, the best thing for you, on the whole potato or even the carrot...Why would you take it off...??

I don't skin carrots...just wash with a veggie brush...Love em raw...hate em cooked...too sweet. Most veggies I like raw...green beans, broccoli, peppers, etc., and they are better for you that way.

With potatoes, I only peel for mashies. Love the skins on baked or roasted potatoes.

Same here, I won't eat the skin unless it's organic. I haven't had much luck growing potatoes here yet.

Knife here, but there is another option I don't see listed or mentioned here that works a treat on fresh from the garden potatoes: scrub the skin gently off with a pot scourer. My dad taught me to do that years ago. It removes nothing but the skin, as long as you're careful and don't scrub too hard.
