Talking of milk by different species and animals, I am finding goats milk and goats and sheep milk cheese more and more in the supermarkets here. Had some salad with soft goats milk cheese on Thursday. Gosh, that was GOOD!
 
I want to make cheese...but it doesn't fit the low fat diet...:( Guess I could get a fancy-dancy cream separator and then I could at least have skim milk.

And you can add things to it for more interesting flavors. I never buy ricotta for lasagna...I make it. These cheeses actually freeze pretty well, too. Friends relish the "gifts" of cheese spreads.


Hey, FEM, make the cheese and eat. To hell-o with the low fat. Just eat less of it. I mean, you have the goats & milk! Slipping off Keto really got ya with this. But, cut fats elsewhere.

I'm just doing this low fat until the next set of lab work, lol. After this re-check I should be good for another decade or so. I only have a physical about once every 10 years or so. I'm gonna stick with it for the 90 days just to see how/if low fat will actually lower my LDL - or if it's truly all familial.
