No I did not know that. The DH and I eat our steaks rare and very rare. My mother will not eat steaks with me, she gets ill. She says they are raw and I am going to get sick and die if I don't start cooking my steaks more! LOL She is such a worrier! I have actually eaten steak the was still cold...
LOL My DH too! He says there is nothing better than meat for the main dish with a side of...meat! :gig We could never be vegetarians! We LOVE meat!

Not sure how to keep them crispy. But when I make pickles I put ice on them. For about 2-3 hours. They stay crispy even after they have been opened. So maybe try icing them! Worth a try. ;)
