I Alfredo'd the eggplant. I had an open jar so needed to use it up. Put a think layer of alfredo sauce on the bottom of a baking dish, put the (pre-salted and rinsed) eggplant slices on top, spread more alfredo sauce on top and baked. Topped with lots of grated parm at the end. It was good...

Fed the critters and back inside for my second cuppa. WooHoo! Temps in the mid 60's this morning. We'll finally get some lower humidity also. Temps will still go up to the low 90's but with drier air - it's tolerable for sure!
